From 'wichcraft: Roasted Turkey with Avocado, Bacon, Balsamic Onion Marmalade, and Mayonnaise

This recipe is one of our biggest sellers but, interestingly, each customer cites a different reason the sandwich is special. One says that she could eat the onion marmalade with a spoon for breakfast daily. Others can’t say enough about the bacon. Tom applauds Sisha’s decision to cut the turkey thicker, thus showcasing its moistness. This is an ensemble piece, with no clear headliner. While we use ciabatta, this sandwich would work as well on country bread, too.

Ingredients

• 6 fresh sage leaves

• 1 (3- to 4-pound) boneless turkey breast

• 2 tablespoons unsalted butter, softened

• Kosher salt and freshly ground black pepper

• 12 slices bacon

• 4 ciabatta rolls

• 1/2 cup Balsamic Onion Marmalade

• 1 ripe avocado, halved, pitted, peeled, and sliced

• 4 tablespoons Mayonnaise

Note: Don’t cook the bacon over too high heat or the fat will burn. When you’re done, save the fat you’ve rendered and store it in the freezer. The next time you’re roasting some vegetables, toss some bacon fat in with them! (Makes 4 sandwiches)

Directions

Preheat the oven to 350°F.

Slide the sage leaves under the skin of the turkey breast and place the turkey on a sheet pan. Rub the skin with the butter and season generously with salt and pepper. Roast the turkey for 1 to 1½ hours, until it reaches an internal temperature of 165°F. Baste the meat with its juices throughout. (Keep in mind that the meat will continue to cook even after it’s removed from the oven, so be careful not to cook it too long.) Allow the meat to rest before slicing, or cool completely.

In a heavy skillet over medium-high heat, cook the bacon until golden brown and crisp on both sides. Transfer to paper towels to drain.

Slice the ciabatta rolls in half. Place the turkey slices on the bottom halves and top with the marmalade. Place the bottom and top halves of the rolls in the 350°F oven and remove once the marmalade is heated through and the bread is toasted. Top the marmalade with the bacon, followed by the avocado. Evenly spread the mayonnaise on the top halves of the rolls. Close the sandwiches, cut into halves, and serve.

From 'wichcraft: Chocolate Cream’wich

Two surprises set this cookie apart: The first is that the filling is made with a chocolate ganache as opposed to just a frosting. The cream and the chocolate melt together perfectly, yielding a satisfyingly smooth texture to the filling itself. In contrast to the creaminess is the second surprise: the cocoa nibs, little pieces of roasted cacao beans. These bits add a crunchy texture that is wholly and delightfully unexpected.

Ingredients

For the cookie:

• For the cookie

• 1/3 cup cocoa nibs

• 3/4 cup (1 1/2 sticks) unsalted butter, softened

• 2/3 cup dark brown sugar

• 2/3 cup granulated sugar

• 6 ounces bittersweet chocolate (64% cocoa), melted in a double boiler

• 1 tablespoon vanilla extract

• 1 3/4 cups all-purpose flour

• 1 teaspoon baking soda

• 1/2 teaspoon kosher salt

• 1/2 cup unsweetened cocoa powder

For the filling:

• 4 ounces bittersweet chocolate (64% cocoa), finely chopped

• 2 tablespoons unsalted butter

• 1/4 teaspoon kosher salt

• 1/4 cup heavy cream

(Makes 1 dozen sandwich cookies)

Directions

Preheat the oven to 350ºF.

To make the cookies: Grind the cocoa nibs in a coffee grinder or food processor until a fine powder. In the bowl of a stand mixer with the paddle attachment, combine the butter, ground cocoa nibs, and the sugars on medium speed until well mixed. Add the melted chocolate and the vanilla. Sift together the dry ingredients and add to the bowl. Mix into a smooth dough and chill in the freezer for 5 minutes.

Transfer the dough to a large surface covered with a layer of parchment paper. Top with another layer of parchment and gently roll the dough into a ¼-inch-thick sheet. To prevent the cookies from sticking as you cut them, carefully remove the top layer of parchment and sprinkle some flour over the sheet of dough. Replace the parchment, flip the dough, and release the parchment on the other side. Cut the dough into 2½-inch round cookies and space ½ inch apart on an ungreased cookie sheet. Gather any leftover scraps of dough and roll and cut as described above. Repeat until you have no dough left. Bake the cookies for about 15 minutes, turning the pan 90 degrees halfway through baking, until you can smell the toasted chocolate. Transfer the cookies to a cooling rack. Cool completely. Once cool, the cookies should be crisp.

To make the filling: Place the chocolate, butter, and salt in a medium mixing bowl. In a small saucepan, bring the cream to a boil and pour one-third of the cream over the chopped chocolate to melt the chocolate. Add the rest of the cream and stir until smooth. Let cool to room temperature.

Place half of the cookies with the top side (the most attractive) down. Using a piping bag or a spoon, evenly distribute the filling among those cookies, and close into sandwiches with the remaining cookies. Gently press down. Serve immediately or store the cookies in a cool place.

When Colicchio, restaurateur and head judge of the TV show Top Chef, turned his attention to sandwiches, chances were slim that the result would look much like the pathetic specimens found in most brown bags. Instead, at wichcraft, the sandwich shop he created with Ortuzar, they built on a common realization of home cooks and chefs: the best sandwiches are made with food that was, or could be, part of a good meal—not just disparate elements that probably spent too long in plastic packaging. Hence, a breakfast sandwich of skirt steak with fried eggs and oyster mushrooms; a hearty meatloaf sandwich with cheddar, bacon and tomato relish; and recipes for condiments like balsamic onion marmalade. Classic sandwiches like roast beef or peanut butter and jelly are transformed by the use of freshly roasted meat and homemade jelly, but the book also features some of wichcrafts more unusual creations, such as the ravioli-inspired roasted pumpkin with mozzarella and hazelnut brown butter sandwich, as well as unexpectedly luscious dessert sandwiches. Those looking for the easiest, cheapest fare will not find much of it here, but anyone willing to put in the time and effort to find the best ingredients and prepare them well will be rewarded. Colicchio, a well-known chef and mega-well-known head judge of TVs Top Chef, offers an entire cookbook featuring the sandwiches served at his New York restaurant, ’wichcraft, which was founded a few doors down from his flagship restaurant, Craft. The inspiration behind opening a high-end sandwich shop, Colicchio claims, was that he ran some numbers and figured that roughly 58 percent of the meals he’s eaten in his life have been sandwiches. He takes the Thanksgiving-leftovers sandwich as a model, reasoning that its success is due to the fact that “everything in it was originally crafted for a great meal.” It’s an undeniably intriguing tenet, and this book’s table of contents alone will have grab-and-go eaters and sophisticated gastronomes alike salivating. The recipes themselves are mostly just assembly guidelines with the most relevant information imparted in the titles, mostly helpful for imaginative ingredient pairings. Home chefs will be best served by digesting Colicchio’s advice on how to effectively shop for quality ingredients and breads, balance flavor elements, and keep a well-stocked pantry. --Ian Chipman

Serious Sandwiches

It is important to understand the type of book you're purchasing when you choose this one. I work full time and usually bring a lunch. Bored of ham and cheese sandwiches, I picked this up in hopes that I would find some inspiration for better lunches. I did not. The book offers recipes that, while delicious sounding, are too complicated to make the night or morning before work. Many of the recipes include slow roasted meat (sandwiches with leg of lamb, pulled pork, braised short ribs), over the top ingredients (for my purposes anyway) like sushi grade tuna, or involved condiments like homemade lemon confit. Plus, the biggest portion of the book is dedicated to warm sandwiches, which don't work for work. I love to cook and do not shy away from involved techniques or recipes, it's just this doesn't suit my purposes when I need something quick.

If you entertain a lot, and want casual but impressive meals that can be semi-prepared in advance, you will find this more useful. The book offers a few breakfast recipes, a collection of cold sandwiches (ie, salami with marinated cauliflower; smashed chickpeas; mortadella with grilled raddicchio and pistachio vinaigrette), and a large chapter on warm sandwiches (ie, gruyere with caramelized onions; mozzarella and provolone with olives and roasted tomato). There are also a few dessert sandwich recipes, as well as a section with condiment recipes, which mostly include variations on mayo and vinaigrette.

The book is beautifully presented, with great pictures of each sandwich, and a smartly formatted table of contents that displays a thumbnail size picture of each sandwich. There are pages in between recipes that detail sandwich architecture (like I said...takes the sandwich seriously!) bread types, oil types, and advance prepping. Overall, it is a high quality book, but for the money, make sure it's recipes you'll actually use.

Gorgeous and ingenious

The sandwich is a creature born of convenience, and a certain amount of negligence, a Just-slap-it-on-a-slice-of-bread-and-I'm-outta-here mentality. So when someone comes along and raises the lowly sandwich to a work of art, it's worth a look. Tom Colicchio and Sisha Ortúzar have done just that with "'wichcraft" a beautiful book that takes sandwiches to a higher level.

The book is broken down by the sort of sandwich you might want to create: Breakfast, cold sandwiches which are particularly well-suited for lunches, and hot sandwiches which are heartier. There is also a section on sweet sandwiches which range from sandwich cookies to towers built of cake slices, ice cream and fruit. While there are some familiar sandwiches such as BLTs, most are either new takes on other dishes such as Salad Lyonnaise or very new concoctions such as the beer-braised beef short ribs with pickled vegetables, sharp cheddar and horseradish. There are also sections on sandwich information: The history of the sandwich, good sandwich architecture and so forth. There is even a section on the sandwich as a meal, and how less is more when it comes to piling the food on the plate. Excellent advice.

If I have a problem with this book, it's a minor one, but still worth discussing. Many of the sandwiches require a number of special ingredients. Now granted you can make many of these yourself; the recipes are included. But it almost pre-supposes that you're cooking for more than one or two people. And leftovers are often good for a week, which means you'll either be eating the same sandwich all week, or throwing a lot of relishes and garnishes out. I don't think this will keep many people from creating the sandwiches in the book, but it might mean they'll make them less often, or substitute other ingredients.

On the whole, though, I think that if you're a sandwich lover as I am, this book will set you to imagining all the amazing sandwiches you might whip up. It might provoke you to entertain more!

My Favorite Cookbook

This is currently the most-used cookbook in my collection. Sandwiches are far and away my favorite food, mostly because of the many layers of flavor they deliver in a single bite--and the recipes in this book do not disappoint. The authors' philosophy that a sandwich should contain all the delicious ingredients of a well-balanced meal has made their recipes and ingredient combinations bright, exciting, and totally original. All the people I've served these sandwiches to have been amazed at the unique, delectable ingredient parings.

I've made fourteen of the sandwiches in this book...and every one has been a winner. I'm twenty-one and have only been cooking seriously for about a year, but I didn't find any of the techniques or ingredients daunting or complicated in the least. It is true that the sandwiches in 'wichcraft take more time to prepare than spreading jam and peanut butter on two pieces of bread and slapping them together, but that's what makes them fabulous: they really are an entire meal unto themselves, simply stacked onto bread rather than plated.

My only qualm with these recipes are that some tend to be quite heavy-handed in terms of how much oil they call for, but the amounts of oil can be cut dramatically without sacrificing flavor.

Some particular recommendations are: slow roasted pork with red cabbage, jalapenos, and mustard; chicken breast with roasted peppers, mozzarella, and spinach-basil pesto; roast beef with grilled red onions, radish slaw, and black pepper mayonnaise.

Steve Tsang is the Director of the China Policy Institute and Professor of Contemporary Chinese Studies at the University of Nottingham, UK. He is also an Emeritus Fellow of St Antony's College, Oxford University. He has published 15 books, of which the most recent one on Taiwan is Taiwan and the International Community (2008).

This book grew out of a workshop at St. Anthony’s College, Oxford University in June 2010. Editor Steve Tsang served as dean and director of the Asian Studies Centre there at the time. He has since moved to the University of Nottingham.

The major theme of the book is the vibrancy and vitality of so many aspects of society, that has characterized society since the end of the Kuomintang’s Martial Law in 1987. In many ways, this book is a corollary to David Blundell’s Taiwan Since Martial Law.

Steve Tsang was able to bring together a group of noted Taiwan scholars, including Mark Harrison of the University of Tasmania, Michael Hsiao of the Academia Sinica, Gary Rawnsley of the University of Leeds, Lin Pei-yin at the University of Cambridge, Gunter Schubert of the University of Tuebingen, and Joseph Wong of the University of Toronto.

In the introduction Tsang not only introduces the main theme of the book and highlights the individual chapters, but also makes a number of more general points that are worth remembering when discussing Taiwan.

The first one is that while the legacy of Sinicization imposed by Chiang Kai-shek during the post-War decades still looms large, as time goes by Taiwan’s democratization and national identity has taken on more and more local characteristics. He writes: In the era of democracy defining the identity of Taiwan is …. A prerogative of its people, to be agreed upon through the democratic process in due course.

A second point Tsang makes is that in spite of the easing of tension and enmity across the Taiwan Strait after president Ma came to power in 2008, the PRC will be unable and unwilling to tolerate a democracy on its doorstep. Writes Tsang: … whether it will or can tolerate a genuine and vibrant democracy like Taiwan to exists within the framework of a united China is highly questionable.

Tsang adds: As long as the political system in the PRC remains basically the same, the CCP will not and indeed cannot afford to tolerate a vibrant democracy within its national jurisdiction, whatever the terms of a deal it may make with Taiwan for unification.

The other authors describe, each in their own field, how the society broke through the vestiges of the old authoritarian regime, and brought about a dynamism, exuberance and creativity that was unheard of just a couple of decades ago.

In his chapter on Social Foundations of Political Vitality, Michael Hsiao does an excellent job in describing how civil society evolved from the authoritarian era to 2011, detailing how it keeps the democratic system robust through its constant scrutiny.

A particularly interesting essay is also Lin Pei-yin’s Literature’s role in breaching the authoritarian mindset, on how “nativist” literature was a key factor in pushing back against the imposition of Chineseness by the KMT during the Martial Law era, and was subsequently instrumental in developing new Taiwanese cultural and national identity.

Mark Harrison paints the importance of democratization on cultural life, and shows how in film and literature there has been an explosion of artistic expression that focuses on Taiwan’s own identity and history, as opposed to the sino-centric approach brought over by the Chinese Nationalists and imposed on society during the Martial Law years.

Gary Rawnsley and his co-writer Sarah Gong do an excellent survey of the role of the media in monitoring Taiwan’s democracy. They interview a number of journalists and politicians and go into the different roles played in nurturing Taiwan’s nascent democracy.

There are several other good chapters, including Guenther Schubert's analysis of the Taishang (Taiwanese businessmen in China) and their role in both the economy and political system.

In all, a very valuable contribution to the understanding of where Taiwan came from, and where its people want to go … with gusto, enthusiasm, and vitality.

A Rare Gem - Poetic and Provocative

Until this book, I hadn't read anything in comics (I only read alternative comics) that deals with such a dark and unusual subject as mental illness, let alone one illustrated in such fluid and dreamy images. Nate Powell has a very inventive and cinematic way of arranging his panels. The narration at times is short on text, which made me pause and think. Then I was taken aback by the instensity of the story once I realized what just happened. This book is pure literature and art - a well-deserved Eisner winner.

Sensitive, baffling narration

Powell does it again: a low-key but sensitive narration, characters to care about, and strong, expressive drawing. As in other of his stories, Powell addresses the hormone-lashed insanity of teen years. This time he adds a complex family situation, though not as complex as some you might have seen, and another element: incipient schizophrenia. We don't see enough of Ruth's story to know how it ends. Schizophrenia can be a tragic, debilitating disease or, with modern treatment, just another medical condition to manage. Even if we don't see how Ruth's life plays out, we care. Powell really makes it easy to care about this bright, principled young woman.

The art in this black and white comic spans a range of styles. Powell uses the whole range of light and dark to convey the sense of each moment. His linework handles each scene well, too, from schoolroom tedium to surreal renderings of the world Ruth sees. As with other of Powell's graphic novels, linear storytelling appears as only a minor component. Instead, this has a less literal sense, flowing easily between the many moods of a teenager and even into the moods arising from her illness. If you want a more literary experience than most graphic novels offer, this has my highest recommendation.

A Very Good Book, and Worthwhile Reading

This is not an easy book to read. It is a very good book, and worthwhile reading, but it is not a pleasant book.

Nate Powell brings us into the world of Ruth and Perry, a teenaged brother and sister who live in a fairly normal family somewhere in the South. Their parents are loving, if a bit exasperated and distant at times; their house is small and not particularly nice; and as the story opens, their seriously ill grandmother is arriving to spend her dying days (which turn into years) lying on their couch.

On the surface, this family looks normal, but that's what makes the hallucinations so striking. Both Ruth and Perry see things that aren't there, and the things they see control their lives. Perry's vision is simple: A wizard who sits on the end of his pencil and commands him to draw. Ruth's is more complicated: She sees insects, a multiplicity of creatures who pile in through gratings and windows or simply buzz around her as she walks. She fills jars with specimens of different bugs and arranges and rearranges them as a way of exerting control over the world.

One of the things that makes this book so compelling is the way the hallucinations mix in with ordinary life. Ruth and Perry help with the dishes, go to class, sit with their ailing grandmother, but all the time they are accompanied by these odd manifestations. Sometimes they slip in public, talking back to the hallucinations within earshot of outsiders, but the bond between Ruth and Perry is built from the understanding that only they have, the shared family secret of things that aren't there. As the book goes on, their grandmother reveals that she, too, has had visions. Memaw may be old and sick, but she is sharp enough to see what is going on.

The great advantage of the graphic novel form is that Powell can use visuals not only to depict the hallucinations but also to show the inner states of his characters. Most of his pages are dark, the characters and settings hidden in heavily hatched shadows, but when Ruth begins taking antipsychotic medications, the shadows drop away and the drawings become bright and clear.

While Perry's hallucinations stay more or less under control, Ruth's grow stronger, and she submits to them more and more. It would be easy to be heavyhanded about this, but Powell continues to interweave Ruth's inner demons with the ennui of everyday life. Some of her actions, such as stealing a stuffed frog from a museum, seem clearly "crazy," but when she stands up to a teacher's clumsy racist joke, it's hard not to sympathize.

Managing Global Innovation - how to build an innovation network that really works.

I thoroughly recommend `Managing Global Innovation' to anyone who has an interest in what continuing globalisation means for how firms need to organise and structure themselves to remain competitive. Taking this huge, complex subject, the authors have produced a well thought-out, strongly argued and informative response that is the product of field research carried out over a long period of time.

The pacy style of writing (refreshingly jargon-free) holds the reader's interest as you are guided through a penetrating analysis of each of the challenges to globally integrated innovation, and then given the solutions needed to overcome them. The two appendices provide helpful context into the drivers of knowledge dispersion and how the nature of innovation has changed since the mid 1970s.

For me a brilliantly used feature of the book, and one that greatly enhances the force of the narrative, is the way examples from the well known companies they worked with are inserted to illustrate the authors' conclusions. Planted in the text of every chapter in stand out boxes, these examples draw the complex threads of the argument together and form a pertinent and striking illustration of the actions necessary to bring about a desired result. And unlike so many business books, the examples do not only illustrate how a particular tactic is a necesssary step towards building an organisation that encourages innovation, but also the where, why and how it could fail to do so.

Many managers reading this book will immediately recognise challenges their own organisations have faced but usually failed to resolve, despite the deployment of considerable human and financial resources. However, after absorbing the book's messages, and armed with the clear road map provided by the authors, they should feel confident of being able to make the strategic choices that could finally put them on the road to successful global innovation.

I foresee this well researched and beautifully written book becoming a highly influential and thought provoking contribution to an increasingly critical problem for so many organisations; one that has long been recognised,and on which much ink has been spilled without producing any widely applicable solutions. Firmly rooted in real life business cases, this book may finally put the argument to rest by offering global companies strategies that actually work.

How to conceive, build, and hone a global innovation capability "that is enduring, practical, and rooted in realities"

The title of this review is taken from a brilliant Foreword in which Cesare Mainardi suggests that this book explains "how to conceive, build, and hone a global innovation capability that is enduring, practical, and rooted in the realities of both global competition and a company's particular approach to its market." In my opinion, this is a "must read" for leaders of companies that have that strategic objective but also for leaders of other companies that are part of the value chain of those companies that are now struggling with the challenges of managing global innovation. Yves Doz and Keeley Wilson provide in this remarkable volume several frameworks for integrating capabilities around the world.

I commend Doz and Wilson on their brilliant use of several reader-friendly devices that include 17 "Sidebars," mini-commentaries on real-world situations that illustrate the given business principle. For example, "Tata Communications: A Globally Integrated Model" (Pages 10-12), Nokia: Attracting Leading Edge Research" (50-51), and "Sapphire: Strong Project Management Delivering Success" (162-164). These and other resources throughout the book can help business leaders to respond effectively to a daunting challenge, "building a global innovation capability that relies on complex knowledge will be difficult, though not impossible." What to do? Doz and Wilson propose a three-step process and explain how to complete each step.

These are among the passages of greatest interest and value to me. They suggest the range of subjects on which Doz and Wilson concentrate through their lively and eloquent narrative.

Yves Doz and Keeley Wilson unravel diverse experiences to enlighten international strategy and management

The authors have successfully distilled a large amount of original, painstaking research with global companies in a number of diverse sectors, into practical, and well-articulated principles that change the way managers and strategists can approach innovation - not just in its more expected fields of innovation, but also in refocussing thinking on ways to optimise existing knowledge networks in any organisation and function within multinationals. For example these principles are just as valuable when implementing complex risk control functions across multiple jurisdictions in a financial institution where the product and expertise footprint varies widely, as they may ensure complex knowledge sources are leveraged to develop new products and services.

This is a seminal example of how to develop complex and diverse examples and experiences (including the opportunity to learn from their mistakes) from some of the world's most successful global companies into ergonomic tools and methods that managers at all levels with cross border and cross cultural objectives can leverage to optimise the effectiveness of their strategy and business structure.

This is critical reading for any international manager with aspirations to effect real, valuable change.

wonderful little appetizer

This is an amazing little introduction that explains the basics of astrobiology, such as the definition of life, extremophiles, abiogenesis, the possibility of life on other planets, and how we can look for it. Despite having a hearty amount of information. LitU is written where someone with no knowledge of of the subject can pick it up and dive in.

Virtually everything made by Oneworld Publications is solid gold and this is no exception.

This small book presents state-of-the-art science in an engaging style understandable by anyone with an interest in how we happen to be sitting safely on a charming, pleasant planet in the middle of an often dangerous and hostile Universe. The text explains the fundamental theories of the origins of life, and describes the work underway to explore extreme environments on Earth where life has managed to survive. The author also surveys missions currently being planned to search for life in multiple sites in our solar system such as Mars and the ice moons of the outer planets, as well as the results of efforts to find planets beyond our solar system capable of supporting life as we know it. The book can be read in a single weekend while fishing or relaxing on a beach. But by the end of the weekend the reader will know more about astronomy, geology, biology, and genetics than 90% of the world's population. I strongly recommend this book as one of those "must read" items that come along once in a blue moon.

nice little intro

This book is a very easy to read intro to astrobiology. It contains lots of information, but is made for anyone who is interested to pick up and breeze through. In the process, you will learn about the probability of life existing outside of Earth and about the fundamental aspects of life. This book wonderfully combines my interests of astronomy and biology and is much easier to get through than PCW Davies' The Eerie Silence.
